Indian Cooking Recipe: Dum Ka Biryani
The following are the instructions on how to cook delicious Indian food: Dum Ka Biryani
Ingredients:
1. 1 small cauliflower
2. 2 carrots
3. Few french beans
4. Mint leaves 2tbs - finely cut
5. Coriander leaves 2tbs - finely cut
6. 200 gms curds
7. 10 elaichi
8. 4 pieces cinnamon
9. Red chilli powder 2 tsps
10. Turmeric 1/2 tsp
11. Salt to taste (5 tsps)
12. Lemon juice of 2 big lemons
13. Onions 9
14. Green chillies 15
15. Rice 1 kg
16. Oil for cooking
Method of Preparation:
Deep fry (almost brown) 7 finely cut onions and set it aside. Prepare a mix of cauliflower, carrots, beans, mint, coriander, curds, elaichi, cinnamon, red chilli powder, salt, turmeric, lemon Juice, 2 onions(sliced), and green chillies. Leave the mix to marinate in the deep-freezer for approximately 15-20 minutes. In the mean time, take a big container, put 4 tbsps of oil and fry elaichi and cinnamon. Once you can smell the flavour, add the rice to fry along with it. After 5-7 minutes, add water (10 glasses) to par-boil rice. Once rice is half cooked (strictly no more water left), let the rice dry for a while.
Now, take the marinated mix out of the fridge. Use the same big container, first put all the marinated mix in the bowl then put five spoons of oil on it. Put a layer of the dried par boiled rice on top of it. Now, put a layer of the fried onions leaving another half for another layer of onions on top. Then a layer of rice. And the final layer of onions on top. Add a little biryani colour on the top. Cook the biryani on a low flame with a perfect fitting lid. Leave this for atleast an hour and a half. Then check if the rice is cooked, if yes then then the Dum ka Biryani is ready to serve.
