Indian Cooking Recipe: Kobbari Annam
The following are the instructions on how to cook delicious Indian food: Kobbari Annam
Ingredients:
1. Rice- 1 cup
2. 1 coconut
3. Cashew nuts- as required
4. green chillies 2 - 3
5. salt to taste
6. coconut oil 2 tsp
7. mustard seeds 1/2 tsp
8. urad dal 1 tsp
9. red chillies 2
10. channa dal 1 tsp
11. curry leaves 7
12. jeera 1/2 tsp
13. Keera / Cumcumber 1
14. curd 2 cups
15. green chillies 1
16. coriander leaves 1/4 cup
17. salt to taste
Method of Preparation:
Grate coconut and take out 1/4 of it and keep it aside. Make coconut milk from the remaining coconut by grinding it in the mixie with some water and filtering it. You will get fresh coconut milk. Wash rice and fry it a little, cook it with coconut milk, salt and some water.
Heat the pan add coconut oil and add mustard seeds, urad dal, channa dal, jeera, sliced green chillies, red chillies, curry leaves till it gives nice aroma and add grated coconut to it till it turns brown. Add cooked rice to it and mix it well. Add fried cashew nuts. Serve it hot with keera raita.
