Bengali Zucchini Curry Recipe
Indian Cooking Recipe: Bengali Zucchini Curry
The following are the instructions on how to cook delicious Indian food: Bengali Zucchini Curry
Ingredients:
a. zucchini, cubed
b. potatoes, cubed
2. Salt to taste
3. 1/2 teaspoon turmeric
4. Oil
a. teaspoon ginger paste
b. teaspoon cumin Pd (jeera)
5. 1/2 teaspoon turmeric
6. Chilli Pd to taste
a. tomatoes, chopped
7. Pinch of vegan sugar
a. 1/2 cup water
8. Cilantro


Method of Preparation:
Marinate the zucchini and the potatoes in salt and turmeric for 5 mins. Then heat oil in a vessel and fry them for 5-6 mins till golden. Remove and keep aside. In the remaining oil and the ginger paste, cumin, turmeric and chilli pd. Fry for 2 mins and add the tomatoes. Fry well for 5-6 mins and add the vegetables. Add the vegan sugar and water and cook till done. Garnish with chopped cilantro and serve with hot chapatis or rice
