Indian Cooking Recipe: Khichidi
The following are the instructions on how to cook delicious Indian food: Khichidi
Ingredients:
a. cup rice (washed and soaked 30 minutes)
b. cup masoor daal (washed and soaked 30 minutes)
c. tbsp. Channa daal (washed and soaked 30 minutes)
d. bay leaf
e. green cardamoms
2. 1" stick cinnamon
a. cloves
3. 1/2 tsp. cumin seeds
4. 10-12 tiny onions peeled or
5. 1/2 cup sliced onions
6. 10-12 baby potatoes washed clean
7. 1/2 cup peas shelled
a. carrot diced
8. 1 tsp. ginger grated
9. 1 tsp. garlic grated
10. 3-4 green chillies finely chopped
11. 1 tbsp. coriander finely chopped
12. 1/2 tsp. turmeric powder
13. 1/2 tsp. garam masala powder
14. salt to taste
a. cups water
b. tbsp. ghee
Method of Preparation:
Drain daals, rice in a colander and keep aside. Save this water for adding later.
Semi crush spices (cardamom, cinnamon, cloves), Heat 3 tbsp. ghee in a large heavy skillet. Add cumin seeds, bay leaf, crushed spices, splutter.
Add ginger, garlic, chillies, stir-fry for a moment. Add onion, potato (with skin), stir-fry for 2 minutes. Add carrots, peas, turmeric, and garam masala, salt.
Add daals, rice and gently stir-fry for 1 minute. Add water to make drained water 5 cups.
Heat well and add to skillet. Stir, bring to a boil, cover and simmer till done.
Rice and daals should be done but not overdone. Veggies will get soft and water should be absorbed. Add more water if required in between. When done, pour remaining ghee and sprinkle coriander. Serve piping hot with gravied veggies or kadhi (refer 'khichidis')
