Indian Cooking Recipe: Chicken Baffad
The following are the instructions on how to cook delicious Indian food: Chicken Baffad
Ingredients:
1. 1kg chicken cut into serving size pieces
2. SPICES
a. dried red Kashmiri chillies
b. tsp turmeric powder
3. 15 peppercorns
4. 1/2 tsp cumin seeds
5. 4 cloves
a. inch piece cinnamon
b. onions, finely chopped
c. green chillies, finely chopped
d. inch piece ginger, finely chopped
i. cloves garlic, finely chopped
6. thick and thin milk extracted from 1 coconut
7. salt and vinegar to taste
Method of Preparation:
Fry the onions in a little oil until browned. Meanwhile grind together the spices. Add the chicken, chopped chillies, garlic and ginger to the pan and cook for a minute or so. Add the ground spices and salt and again cook for a minute or so. Now add the thick and thin coconut milk so that the milk just covers the chicken. When chicken is cooked (about 20-30 minutes) add the vinegar and simmer until the sauce has thickened. Serve with plain boiled rice.
