Indian Cooking Recipe: Goan Egg Curry
The following are the instructions on how to cook delicious Indian food: Goan Egg Curry
Ingredients:
A 6 no: Eggs-full boiled and shelled
1. ½ cup: Coconut cream
2. ¾ cup: Coconut-grated
a. cups: Grated tomatoes
3. 6 cloves: Garlic
a. tsp: Chopped ginger
4. 2 cups: Grated onions
5. 2-3 no: Green chillies-slit
6. 2 tbsp: Chopped coriander leaves, for garnish
7. 2 tbsp: Cumin-roasted
a. tbsp: Tamarind paste
8. 2-4 no: Whole dried red peppers-roasted
a. tbsp: Coriander seeds-roasted
b. tbsp: Poppy seeds-roasted
9. 8-10 no: Curry leaves
a. tsp: Garam masala
b. tsp: Turmeric
10. ¼ cup: Oil
a. ½ tbsp: Salt
Method of Preparation:
Grind the coconut, garlic, ginger, and the roasted ingredients to a fine paste.
Heat oil, add onions and curry leaves and stir fry, till the onions are a golden color.
Add the tomatoes and stir fry till fat separates, and add the ground paste, garam masala, turmeric and salt, and stir fry till fat separates again. Add about 2 cups: water and mix well. When it comes to a boil, lower heat and simmers8-10 minutes.
Add coconut cream and tamarind bring to a boil, and then simmer 2-3 minutes.
Add eggs and serve hot garnished with the coriander leaves.
