Indian Cooking Recipe: Corn Cobs In Handi Masala
The following are the instructions on how to cook delicious Indian food: Corn Cobs In Handi Masala
Ingredients:
1. 10-12 fresh and tender large kernel corncobs
a. tbsp. channa daal
2. 1/2 tbsp. urad daal
3. 1/2 tsp. each cumin and coriander seeds
a. stalk curry leaves
b. tbsp. coriander leaves finely chopped
c. cup tamarind water
d. tsp. chili powder
e. 1/2 tsp. dhania (coriander seeds) powder
4. 1/4 tsp. turmeric powder
5. 1/2 tsp. garam masala powder
6. Salt to taste
7. 1/4 cup jaggery softened
8. 1 tbsp. coconut scraped
a. tbsp. oil
Method of Preparation:
Break cobs into 2"-3" pieces. Wash and keep aside.
Heat oil in handi, allow smoking, adding seeds. Allow to splutter, add curry leaves and dals. Stir for 4-5 seconds, add chili powder, and stir. Immediately add tamarind water. Bring to a boil. Add all other masala, coconut, and jaggery, salt.
Simmer for 1 minute. Add 4 cups water, bring to a boil. Add corn, bring back to boil. Allow to cook for 4-5 minutes. Cover and seal, cook on slow flame for 20 minutes. Break open seal, remove cover. Mix well once, simmer and allow excess wateriness to evaporate. Garnish with coriander, serve hot to be eaten as is one should hold either with hand or corn pins on both sides. Eat it like other corn cobs. Discard bone.
Serve with chilled soft drinks or piping hot coffee.
