Indian Cooking Recipe: Khichu
The following are the instructions on how to cook delicious Indian food: Khichu
Ingredients:
1. 1 lb Floury potatoes
2. 1 T Tamarind pulp
3. 1/4 c Water
4. 2 t Brown sugar
5. 1 1/2 T Ghee or oil
6. 1/2 t Black mustard seeds
7. 1/2 t Ground turmeric
8. 1/2 t Cayenne or ground chili pdr
9. 1 t Ground coriander
10. 1 t Ground cumin
11. 1 t Salt
12. 2 Fresh green chilies, seeded And thinly sliced
13. 2 T Desiccated coconut
Method of Preparation:
Wash and soak the moong daal and rice together. Drain. In a bowl, mix the daal and rice with the turmeric powder, peppercorns, 4 1/2 cups of water and salt. Pressure cook for 3 to 4 whistles and set aside for 20 minutes till the steam has been released. Remove from the pressure cooker, add the ghee and mix well. Serve hot with kadhi and papad.
