Indian Cooking Recipe: Sweet 'n' Sour Ash Gourd Curry
The following are the instructions on how to cook delicious Indian food: Sweet 'n' Sour Ash Gourd Curry
Ingredients:
1. Ash gourd 2 cups, steam or boil till soft
2. Coconut 1/2, grated
3. Coriander seeds 1 tbsp
4. Mustard seeds 1 tsp
5. Curry leaves 1 sprig
6. Red chillies 5
7. Bengal gram dal 1 tsp
8. Methi seeds 6
9. Turmeric powder a pinch
10. Asafeotida powder a pinch
11. Til 1 tsp (Sesame seeds)
12. Raw rice 1 tsp
13. Tamarind size of lemon
14. Oil 1 tbsp
15. Large lemon sized pieces jaggery 2
16. Salt to taste


Method of Preparation:
Fry coconut till golden brown and fry other ingredients in oil till roasted. Grind together with little water to a very coarse paste. Add the masala to the cooked ash gourd along with jaggery and salt. Bring to boil and season with mustard and curry leaves. Variation: Can also be prepared using pumpkin or Mangalore cucumber.
