Indian Cooking Recipe: Kootu Theeyal
The following are the instructions on how to cook delicious Indian food: Kootu Theeyal
Ingredients:
1. Vegetables 3 cups, Lady's finger, Small Brinjal, Cucumber, Potato pieces
2. Slit button onions 1/2 cup
3. Grated coconut 2 1/2 cups
4. Red Chillies 12
5. Fenugreek 3/4 tsp
6. Tamarind, size of a lime
7. Coconut oil 4 tsps
8. Mustard 1/2 tsp
9. Small Onions 2
10. Salt to taste
Method of Preparation:
Fry 8 red chillies, grated coconut and fenugreek in one teaspoon of oil. Grind all the fried ingredients to a fine paste. Cut all the vegetables into small pieces. Heat 2 tsps of oil in a vessel and add the sliced vegetables and onions and keep stirring till they are cooked. Remove the vegetables, pour the remaining oil and add the mustard seeds. When they crackle, fry two onions sliced and the four broken red chillies. Mix all together. Dilute the tamarind in two cups water, strain and add salt to taste. Mix the ground masala to it. Add this to the vegetables. When it froths, remove the curry from the fire.
