Njandu Curry Recipe
Indian Cooking Recipe: Njandu Curry
The following are the instructions on how to cook delicious Indian food: Njandu Curry
Ingredients:
1. 4 large crabs
2. 100 gms red onion, sliced
3. 2 green chillies, chopped
4. 3 1/2 tbsps roasted curry powder
5. 2 tsps turmeric powder
6. ½ tsp chilli powder
7. 1 tsp fenugreek (methi seeds)
8. 2 pieces gamboges, chopped
9. 1 spring curry leaves
10. 2 cups water
11. 4 cups thick coconut milk
12. ½ tsp mustard powder
13. Juice of one lemon
14. Salt & pepper, to taste


Method of Preparation:
Clean crabs and divide each into 4 pieces. Place into large pan; add all ingredients except coconut milk, mustard powder, lime juice and salt. Bring to a boil, add coconut milk and allow simmering for 10 minutes. Add lime juice, mustard powder and salt. Stir for a few minutes until flavors are mixed well. Remove from heat and serve hot.
