Stuffed Okra Bhaaji Recipe
Indian Cooking Recipe: Stuffed Okra Bhaaji
The following are the instructions on how to cook delicious Indian food: Stuffed Okra Bhaaji
Ingredients:
1. 1/2 kg okra (Bhendi or Lady Fingers ),
2. 1/2 tsp asafoetida,
a. tsp mustard seeds,
b. tbsp oil,
3. For the stuffing: 4. 2 tbsp fresh coconut,
5. 1/2 cup peanut powder,
6. 2 big garlic cloves,
7. 2 tsp coriander powder,
a. tsp cumin powder,
b. tsp turmeric powder,
c. tsp chili powder,
d. tsp lemon juice,
8. salt and sugar to taste,
9. Coriander leaves.


Method of Preparation:
1. Wash okra. Wipe dry, remove stems and trim the tail part. Give them vertical slits. Do not rinse them in water again.
2. for the stuffing, mix together peanut powder, coconut, crushed garlic, coriander-cumin powder, chili powder, turmeric powder, chopped coriander leaves, salt and sugar. Stuff each okra with the mixture. Keep aside.
3. Heat 2 tbsp oil in a pan. Add mustard seeds and asafetida. Add stuffed okra and stir gently. Add remaining masala. Fry for sometime. Cook over low heat without the lid on the pan. Keep stirring occasionally until the pieces turn soft.
4. Once done, remove from the heat. Garnish with coriander leaves and coconut if desired. Serve hot with chapati.


TIP: Do not cover the pan while cooking to avoid stickiness in the bhaaji.
