Indian Cooking Recipe: Zeera Murg
The following are the instructions on how to cook delicious Indian food: Zeera Murg
Ingredients:
1. kg Chicken thigh
2. Cutlets or breasts,
3. Whole or in fine
4. Strips (4.5 lb)
5. Juice of 2 lemons
a. ts Salt
b. ts Cayenne
c. oz Flour
6. 6 oz Butter
a. Onions, finely sliced
7. 2 cl Garlic, crushed
8. 2 1/2 Inch piece root ginger,
9. Finely chopped
10. 2 ts Cumin seeds
11. 500 ml Yoghurt* (1 pint)
12. 150 ml Fresh cream* (or equal
13. Quantity of sour light
14. Cream) (1/2 cup)
a. can Coconut cream (if mixture
15. Seems too dry through
16. Prolonged cooking)
17. Thinly pared rind of
a. lemon, in 1 piece
Method of Preparation:
Place chicken on a large plate and rub over with lemon juice. Set Aside for at least 20 minutes, and then pat fry with kitchen paper. Mix Salt, cayenne and flour on a plate and dredge chicken pieces. Melt butter in pan, add the chicken and fry until Browned. Add onions, garlic, ginger and cumin seeds and fry until Golden brown. Stir in yoghurt, cream and lemon rind. Return to chicken mixture and mix until all chicken is well coated. Bring to the Boil, reduce the heat to low, and simmer for 1 hour or until chicken is cooked. Uncover the pan for the last 20 minutes, to allow sauce to reduce. Discard lemon rind (if you can find it) before serving.
