Chicken Vindaloo Recipe
Indian Cooking Recipe: Chicken Vindaloo
The following are the instructions on how to cook delicious Indian food: Chicken Vindaloo
Ingredients:
1. Chicken, cut in big pieces, 1 Kg
2. Whole red chillies 5
3. Black pepper 1 1/2 tsp
4. Mustard 1/4 tsp
5. Black Jeera 1/4 tsp
6. Cloves 4
7. Cinnamon 1" piece
8. Cardamom 2
9. Ginger, thinly sliced 2 tbsps
10. Garlic, thinly sliced 2 tbsps
11. Cashew nut, soaked in water, 10
12. Raisins, (Kismis) " , 10
13. Tomato 2, Big ones
14. Onion 3
15. Coriander leaves 1 bunch


Method of Preparation:
Marinate the chicken with some salt and turmeric powder. Set aside for 30 min. Powder all the ingredients and mix this masala powder in little water. Grind the cashew and raisins together and set aside. Cut the onion in thin slices and dice the tomato. In a wok, heat some oil, sauté the onion till golden brown, add garlic and ginger and sauté for a minute. Now add the masala paste and stir till the oil separates. Add the diced tomatoes and after 2 min. add the marinated chicken. Let the chicken get well coated with the masala. Now add 1 1/2 cup of water and salt to taste. Cover and cook in medium heat till the chicken is well done. Add the cashew and raisin paste and remove from heat and garnish with chopped coriander leaves. If you like you can add little lime juice too.
