Indian Cooking Recipe: Kancheepuram Idli
The following are the instructions on how to cook delicious Indian food: Kancheepuram Idli
Ingredients:
1. Yellow split moong dal 1 cup
2. Urad Dal 1 cup
3. Black Pepper 2 tsps
4. Jeera 2 tsps
5. Asafeotida 1/2 tsp
6. Ghee 1 tbsp
7. Curry Leaves 2 tsps, finely chopped
8. Coriander Leaves 2 tsps, finely chopped
9. Turmeric Powder 1 tsp
10. Green chillies 5 - 8, finely chopped
11. Ginger 1 inch piece, grated
12. Cashew Nuts 2 tsps, broken into small pieces
13. Raisins 2 - 3 tsps, for decoration
14. Salt to taste
Method of Preparation:
Soak the moong dal and urad dal together for 6 hrs. Drain the dals and grind it into a smooth batter with less amount of water as we do for regular idli batter till it is fluffy. The batter should not be too watery as it will result in the idlis becoming very thin. Add salt to taste and allow the batter to ferment for 6 to 8 hours.
Heat the ghee in a frying pan, first add black pepper and jeera and fry for a few seconds and take them out of the pan and powder it coarsely and add to the idli batter. Then add cashew pieces, turmeric powder, asafeotida, curry leaves, ginger and green chillies, fry for a few seconds and mix it with the batter. Add chopped coriander leaves just before steaming the idlis. Now place some raisins on the greased idli plates and then pour the batter and steam them for 15-20 minutes just like regular rice idlis. Serve hot with coconut chutney and sambar.
