Indian Cooking Recipe: Omapodi (2)
The following are the instructions on how to cook delicious Indian food: Omapodi (2)
Ingredients:
1. Besan - 2 cups
2. Rice Flour - 1/2 cup
3. Omam - 1 tsp (fenugreek)
4. Salt - 1 tsp
5. Ghee - 2 tsp
6. Oil - to deep fry


Method of Preparation:
Clean and soak the omam in water for 1/2 hour. Make into a fine thick paste along with the salt. Add this paste to the besan, rice flour and ghee. Add water little by little and knead into soft thick dough. Heat up the oil in a deep kadai. Fill in a small amount of the dough into the press ("Ural" or "Kuzhal") and use a mould with thin small holes. Press out the dough through the mould over the hot oil. Deep fry until light brown and crisp and drain off the excess oil in a paper towel or tissue. Continue to work on the entire dough in batches.


ALTERNATIVE:
You may use 1/2 tsp chilly powder instead of the omam. Mix this with the salt and other ingredients and knead into soft thick dough. Continue with the rest of the procedure.
