Indian Cooking Recipe: Vendaikkai Curry
The following are the instructions on how to cook delicious Indian food: Vendaikkai Curry
Ingredients:
1. Ladies finger (vendadakkai)
2. Black Gram (Urad Dal) 1/2 tsp
3. Mustard Seeds 1/4 tsp
4. Chilli Powder 1/2 tsp
5. Salt 1/2 tsp
6. Asafetida a pinch
7. Cooking Oil 2 tbsps
8. Tamarind, size of a lemon, 1/3 cup
9. 1/2 coconut
Method of Preparation:
Soak the tamarind in one cup of water for 15 minutes and draw the pulp and strain. Cut the vegetable into small pieces. Mix vegetables with 1/2 tbsp oil and steam for 5 minutes. Heat 1 tbsp oil in a pan and season with urad dal and mustard. After the seeds have cracked, add the grated coconut and stir. Sprinkle some tamarind water all over and cover and simmer for some time. Stir once in a while and keep adding the tamarind water in between. Cook until the color changes from green to a slight golden color. Add salt and chilli powder and simmer for 2 more minutes.
